| Spiedini of Fresh Mozzarella and Tomatoes |
Ingredients:
1/2 lb fresh mozzarella cheese
4 vine-ripened tomatoes, different colors such as red and yellow
salt and freshly ground pepper
1/4 c loosely packed basil leaves
extra-virgin olive oil |
Directions:
Cut the mozzarella ball in half and into half-moon slices.
Choose tomatoes the same size as the mozzarella ball and slice
them in the same manner. Season the cheese and tomatoes on both
sides with salt and pepper. Divide the cheese and tomatoes into
4 equal portions and set them on edge, rounded sides up, alternating
wedges of tomato and cheese. Tuck the basil leaves between the
slices. Fasten each portion with skewers, running through the
row of cheese and tomato. To serve, arrange the skewers on a
platter or 4 plates. Drizzle extra-virgin olive oil over top. |
