Ingredients:
1 lb medium raw shrimp, deveined
6 roma tomatoes, seeded & chopped
1/4 c olive oil
1/4 c sweet butter, softened
1/4 c chopped red onion
3 cloves chopped garlic
dash of sugar
3 T chopped fresh sweet basil
2 T chopped fresh parsley
salt and pepper to taste
8 oz cooked capellini or penne pasta

Directions:
Rinse shrimp and pat dry. Add olive oil to sauté pan
or wok and heat, carefully add onion, tomato and dash of sugar,
sauté until union in transparent. Lower heat, add shrimp
and garlic. Sauté for 3-4 minutes until shrimp is cooked
through. Do not overcook or shrimp will be tough. Add basil,
parsley, freshly cooked pasta, butter and salt and pepper. Toss
and serve immediately. |
